| Easy Homemade Pizza Crust |

Adapted from Emile Henry recipe. This is an easy recipe for homemade pizza dough with directions for making a Cheese, Pesto or Mushrooms pizza. Also included, direction for grilling the pizza on an outdoor gas, charcoal, or natural wood grills. Ingredients: 3 cups all-purpose flour Instructions: Combine flour, yeast, sugar and salt in mixing bowl. Whisk until ingredients are blended. Stir in water and 2 tablespoons olive oil until well blended. Place dough on a lightly floured counter, baking mat or cutting board. Knead 10 minutes. Cover with towel and let rest for 20 minutes. Sprinkle Pizza Peel * with 2 tablespoons corn meal. Place dough on peel and press into a circle. Stretch and roll dough shaping a 14 inch circle and add toppings. Bake at 425 degrees for 15-20 min., or until crust is crispy. CHEESE PIZZA: PESTO PIZZA: MUSHROOM PIZZA: GRILLING DIRECTIONS: GAS GRILL: Light burners, put Emile Henry Pizza Stone Meanwhile, rollout pizza dough onto a pizza peel. Add sauce, cheese and toppings. Just before cooking, sprinkle 2 tablespoons of corn meal on Pizza Stone. Slide pizza directly onto hot Pizza Stone. Cover the grill and cook over high heat for 15-20 min., or until crust is lightly browned and the top is bubbly. When pizza is done, remove it with pizza peel. If you're making another right away, place on a platter; or serve pizza right on the Pizza Stone. Lift up Pizza Stone at handles using potholders. The handles will be very hot. *Also called a pizza paddle. A flat, broad sheet of wood or metal with a handle used to slide breads and pizza onto a baking stone in the oven.
